Quick and Easy Honey Roasted Whole Chicken with Cornstarch Gravy

Ingredients

  • 1 whole chicken (about 4 pounds)

  • 3 tablespoons olive oil

  • 1/2 cup honey

  • 1/4 cup soy sauce

  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup chicken broth

  • 2 tablespoons cornstarch

  • 2 tablespoons cold water

 

Directions

  • Preheat your oven to 425°F (220°C).

  • Rinse the whole chicken inside and out, then pat it dry with paper towels.

  • In a small bowl, whisk together olive oil, honey, soy sauce, minced garlic, dried thyme, paprika, salt, and black pepper.

  • Rub the honey glaze mixture all over the chicken, making sure to get it under the skin as well. Place the chicken in a roasting pan.

  • Roast the chicken in the preheated oven for about 1 hour and 30 minutes or until the internal temperature reaches 165°F (74°C). Baste the chicken with the juices in the pan every 30 minutes for a flavorful and moist result.

  • Once the chicken is fully cooked, remove it from the roasting pan and let it rest for about 10 minutes before carving.

    Cornstarch Gravy:

  • Place the roasting pan on the stovetop over medium heat.

  • Add chicken broth to the pan, scraping up any browned bits from the bottom.

  • In a small bowl, mix cornstarch with cold water to form a slurry. Slowly pour the cornstarch slurry into the pan while whisking continuously to avoid lumps.

  • Cook the gravy for a few minutes until it thickens and reaches your desired consistency.

    Notes to Make It Better:

  • To ensure even cooking and faster roasting, spatchcock the chicken by removing the backbone and flattening it before roasting.

  • For a hint of citrusy flavor, add the zest of one lemon or orange to the honey glaze mixture.
