EASY TOMATO BISQUE

Silky cozy and full of roasted garlic flavor with a touch of heat and jalapeño brine for brightness

Ingredients

  • 1 28 oz can crushed tomatoes

  • 1 10.5 oz can diced tomatoes with garlic and basil

  • 1 sweet yellow onion chopped

  • 1 cup shredded carrots

  • 2.5 tablespoons roasted garlic paste

  • 2 to 3 tablespoons butter or olive oil

  • ½ teaspoon red pepper flakes

  • 2 to 3 cups chicken broth

  • ¾ to 1 cup heavy cream

  • 2 to 3 tablespoons Parmesan or Romano

  • 1 to 2 teaspoons jalapeño brine

  • ½ to 1 teaspoon smoked paprika optional

  • Salt and black pepper

  • Fresh chopped basil or ½ teaspoon basil paste optional

  • Heavy cream basil oil balsamic glaze for finishing

 

Directions

  1. Sauté onions and carrots in butter or oil for 6 to 8 minutes then stir in roasted garlic paste and red pepper flakes.

  2. Add crushed tomatoes diced tomatoes 2 cups broth smoked paprika and a pinch of sugar if needed then simmer 10 to 12 minutes.

  3. Blend until smooth with an immersion blender adding more broth if you want a thinner soup.

  4. Stir in heavy cream and Parmesan then simmer 3 to 5 minutes and season with salt and pepper.

  5. Turn off heat then stir in jalapeño brine and basil. Taste and adjust.

  6. Finish each bowl with a spoon of cream a few drops basil oil and a light drizzle balsamic glaze. Add croutons if you like.
