Eggplants on Steroids

A rich and hearty eggplant dish simmered in a spiced tomato sauce with a touch of pomegranate molasses for a sweet-tart finish. Perfect as a side or a main over rice or bread.

Ingredients

  • 1 eggplant

  • 1 onion

  • 2 tomatoes

  • 4 cloves garlic

  • Salt and black pepper, to taste

  • 1 teaspoon coriander

  • 1 teaspoon red pepper

  • 1 teaspoon sumac

  • 1 tablespoon pomegranate molasses

  • 2 tablespoons olive oil

 

Directions

  1. Sauté the Base: In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and tomatoes. Cook until softened.

  2. Add Seasonings: Stir in salt, black pepper, coriander, red pepper, sumac, and pomegranate molasses. Cook briefly to bloom the spices.

  3. Cook the Eggplant: Add the eggplant to the skillet and cook until tender, stirring occasionally to coat with the sauce.

  4. Finish and Serve: Combine everything well. Garnish with fresh herbs of your choice and serve warm.
