Eggplants on Steroids
A rich and hearty eggplant dish simmered in a spiced tomato sauce with a touch of pomegranate molasses for a sweet-tart finish. Perfect as a side or a main over rice or bread.

Ingredients
1 eggplant
1 onion
2 tomatoes
4 cloves garlic
Salt and black pepper, to taste
1 teaspoon coriander
1 teaspoon red pepper
1 teaspoon sumac
1 tablespoon pomegranate molasses
2 tablespoons olive oil
Directions
Sauté the Base: In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and tomatoes. Cook until softened.
Add Seasonings: Stir in salt, black pepper, coriander, red pepper, sumac, and pomegranate molasses. Cook briefly to bloom the spices.
Cook the Eggplant: Add the eggplant to the skillet and cook until tender, stirring occasionally to coat with the sauce.
Finish and Serve: Combine everything well. Garnish with fresh herbs of your choice and serve warm.
