Fresh spring rolls with peanut sauce are a light, refreshing dish made by wrapping delicate rice paper around a mix of crisp vegetables, herbs, and protein like shrimp, chicken, or tofu. They’re served chilled or at room temperature alongside a rich, creamy peanut sauce made from peanut butter, soy sauce, lime juice, garlic, and a touch of sweetness, creating a perfect contrast of fresh, crunchy, and savory flavors.

Ingredients
For the Spring Rolls
Rice paper wrappers
Cooked chicken
Butter lettuce or romaine leaves
Shredded carrots
Cucumber, julienned
Fresh herbs (mint, cilantro, basil)
For the Peanut Sauce
1/3 cup creamy peanut butter
1-2 tbsp soy sauce
1 tbsp hoisin sauce (optional but common)
1 tbsp honey or maple syrup
1-2 tsp rice vinegar or lime juice
1/2 tsp garlic (minced or powder)
Warm water (to thin)
Directions
Prepare the Peanut Sauce
Whisk all peanut sauce ingredients together until smooth. Add warm water a little at a time until it’s silky and dippable.
Prepare the Rice Paper
Soften the rice paper by dipping one sheet in warm water for ~10-15 seconds until pliable.
Place the Fillings
Layer fillings in the bottom third of the wrapper (Lettuce, Rice Noodles, Veggies, Protein and Herbs).
Roll Up the Wrappers
Fold bottom over filling, fold in the sides and roll tightly like a burrito.
