Frijoles y Queso Taquitos

Crispy golden corn tortillas rolled and filled with seasoned refried beans and melty cheese. Perfect for serving with fresh toppings like sour cream, guacamole, and pico de gallo.

Ingredients

  • Refried beans (fresh or one can)

  • Oil, for shallow frying

  • Salt & pepper, to taste

  • Chili powder, paprika, cumin, garlic powder, onion powder to taste

  • Mozzarella cheese (as much as you want), grated or sliced

  • 12 corn tortillas, softened

 

Directions

  1. Season Beans: Mix refried beans with spices to taste.

  2. Add Cheese: Stir in grated or sliced cheese.

  3. Adjust Consistency: Add a splash of water or stock if beans are too thick.

  4. Heat Oil: Warm oil in a skillet for shallow frying.

  5. Fill & Roll: Spread bean mixture on half of each softened tortilla, roll tightly, and place seam-side down in hot oil.

  6. Fry: Cook until golden brown and crispy. Drain on paper towels.
