Potato and Cheese Dorados
Crispy golden corn tortillas filled with creamy seasoned potatoes and melty cheese, perfect for frying, baking, or air frying. Serve with fresh toppings for a delicious appetizer or main dish.

Ingredients
12 corn tortillas, softened
2–4 potatoes (russet or gold), cubed
Seasonings: salt, pepper, garlic powder, onion powder, paprika, cumin
Cheese: mozzarella or any good melting cheese
Optional: Mexican oregano
Oil, for frying
Directions
Boil Potatoes: Cook cubed potatoes until tender, reserving some of the cooking water.
Mash & Season: Mash potatoes, add seasonings, and mix well.
Add Cheese: Stir in cheese. If mixture is too dry, add reserved potato water until spreadable.
Prepare Tortillas: Place 1–2 tablespoons of filling on half of each softened tortilla. Fold in half to close.
Cook: Heat oil in a skillet and fry until crispy and golden.
Baking/Air Frying: Bake or air fry at 425°F for 12–15 minutes, flipping halfway.
Vegan Option: Omit cheese or use vegan cheese.
Serve: Garnish with salad, salsa, and fresh cilantro.
