Potato and Cheese Dorados

Crispy golden corn tortillas filled with creamy seasoned potatoes and melty cheese, perfect for frying, baking, or air frying. Serve with fresh toppings for a delicious appetizer or main dish.

Ingredients

  • 12 corn tortillas, softened

  • 2–4 potatoes (russet or gold), cubed

  • Seasonings: salt, pepper, garlic powder, onion powder, paprika, cumin

  • Cheese: mozzarella or any good melting cheese

  • Optional: Mexican oregano

  • Oil, for frying

 

Directions

  1. Boil Potatoes: Cook cubed potatoes until tender, reserving some of the cooking water.

  2. Mash & Season: Mash potatoes, add seasonings, and mix well.

  3. Add Cheese: Stir in cheese. If mixture is too dry, add reserved potato water until spreadable.

  4. Prepare Tortillas: Place 1–2 tablespoons of filling on half of each softened tortilla. Fold in half to close.

  5. Cook: Heat oil in a skillet and fry until crispy and golden.

  6. Baking/Air Frying: Bake or air fry at 425°F for 12–15 minutes, flipping halfway.

    Vegan Option: Omit cheese or use vegan cheese.

  7. Serve: Garnish with salad, salsa, and fresh cilantro.
