Garlic Chicken Meal Prep
Juicy garlic-butter chicken bites paired with tender-crisp green beans or zucchini. Simple, bold, and perfect for easy make-ahead lunches or fast dinners.

Ingredients
1½ lbs chicken breasts or thighs, cut into 1-inch cubes
1 tsp salt
½ tsp black pepper
1 tsp paprika
½ tsp garlic powder
2 tbsp avocado oil, divided
3 tbsp butter
3–4 cloves garlic, minced
½ tsp Italian seasoning or dried parsley
1 tbsp lemon juice, optional
12 oz fresh green beans or zucchini, trimmed
Salt and black pepper, to taste
Optional ¼ tsp red pepper flakes
Directions
Heat 1 tbsp avocado oil in a large skillet over medium heat. Add green beans or zucchini, season lightly with salt, pepper, and optional red pepper flakes. Sauté 5–7 minutes until crisp-tender. Remove from the skillet and set aside.
In the same skillet, add the remaining 1 tbsp avocado oil. Season chicken with salt, pepper, paprika, and garlic powder. Add to the pan in a single layer and cook 6–8 minutes, stirring occasionally, until golden and cooked through.
Reduce heat to low. Add butter, garlic, and Italian seasoning to the chicken. Stir until melted and fragrant, about 1 minute. Add lemon juice if using.
Return vegetables to the skillet and toss everything together until evenly coated in garlic butter. Serve immediately or portion into containers for meal prep.
