Grinder Sliders

Grinder Sliders are the party version of a classic Italian sub — melty, meaty, tangy, and totally crave-worthy. They’re layered with deli meats, provolone cheese, and topped with a zesty grinder salad for the perfect bite-sized sandwich.

Ingredients

  • 1 pack (12-count) Hawaiian rolls

  • 4 oz sliced pepperoni

  • 4 oz sliced salami

  • 8 oz deli turkey or ham

  • 4 oz provolone cheese, sliced

  • 2 tbsp melted butter

  • ¼ tsp garlic salt

  • ¼ tsp dried Italian seasoning

  • 2 tbsp grated Parmesan cheese

  • 2½ cups shredded iceberg lettuce

  • 2 tbsp diced red onion

  • 1 small tomato, chopped

  • ¼ cup chopped pepperoncini peppers

  • ¼ cup mayonnaise

  • 1 tsp red wine vinegar

  • 1 tsp minced garlic

  • 2 tbsp pepperoncini juice

  • 1 tsp Italian seasoning

  • ¼ tsp kosher salt

  • ⅛ tsp cracked black pepper

  • 1 tbsp grated Parmesan

 

Directions

  1. Preheat oven to 350°F (175°C). Lightly grease or line a baking dish.

  2. Slice the Hawaiian rolls in half horizontally. Place the bottom halves in the baking dish.

  3. Layer the meats and cheese starting with pepperoni, then salami, provolone, and turkey or ham. Top with the remaining halves of the rolls.

  4. Mix the garlic Parmesan glaze by combining melted butter, garlic salt, Italian seasoning, and Parmesan cheese. Brush over the tops of the rolls.

  5. Cover with foil and bake for 20 minutes until warmed through and melty.

  6. Prepare the grinder salad by mixing the lettuce, red onion, tomato, and pepperoncini in a bowl. In a separate bowl, whisk together mayonnaise, red wine vinegar, garlic, pepperoncini juice, Italian seasoning, salt, pepper, and Parmesan. Pour over the salad and toss to coat.

  7. Assemble by lifting the top halves of the rolls, spooning the grinder salad over the meat layer, and replacing the tops.

    Slice and serve warm.
