Harissa-Marinated Chicken Skewers

These flavorful Harissa-Marinated Chicken Skewers are made with tender chicken thighs bathed in a homemade harissa paste, these skewers are perfect for adding a smoky, spicy kick to any outdoor meal. Pre-marinating ensures maximum flavor and grilling them on skewers makes for easy turning and beautiful char marks. Ingredients

  • 1½ lb boneless, skinless chicken thighs, cut into 1" pieces

  • ¼ cup homemade harissa

  • 1 Tbsp olive oil

  • ½ tsp kosher salt, more if needed

  • ¼ tsp white or black pepper, more to taste

  • Wooden or metal skewers (soak wooden skewers in water for 30 min if using)

 

Directions

  1. Marinate the Chicken: In a large bowl, combine the cut chicken thigh pieces with the homemade harissa, olive oil, kosher salt, and black pepper. Toss well to ensure all chicken pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, allowing the flavors to meld.

  2. Prepare Skewers: If using wooden skewers, ensure they have been soaked in water for at least 30 minutes prior to threading to prevent burning on the grill.

  3. Preheat Grill: Preheat your Kamado-style grill (or other outdoor grill) to a medium-high direct heat (approx. 400–450°F / 200–230°C).

  4. Thread Skewers: Thread the marinated chicken pieces onto the prepared skewers. Do not pack them too tightly, as this can hinder even cooking.

  5. Grill the Skewers: Place the chicken skewers directly on the hot grill grates. Cook for 15-20 minutes, turning occasionally, until the chicken is cooked through, juicy, and has beautiful char marks on all sides. Chicken should reach an internal temperature of 165°F (74°C).

  6. Serve: Remove the cooked skewers from the grill and let them rest for a few minutes. Serve immediately with your favorite side dishes, like our Minted Mediterranean Quinoa Salad.
