Homemade French Fries
Crispy outside and fluffy inside, the classic double fried method for perfect fries every time

Ingredients
2½ lbs russet potatoes
Vegetable oil, for frying (about 2–3 quarts)
Salt and pepper, to taste
Optional: chopped parsley, for garnish
Directions
Cut potatoes into even matchsticks and Soak in cold water 30 minutes to overnight. Drain and dry completely.
Heat oil to 300°F (150°C). Fry in batches 4–5 min until tender but pale. Drain. Raise oil to 400°F (200°C).
Fry again 1–3 min until golden and crisp. Drain, season immediately, garnish if desired.
Baked: Toss in olive oil; bake at 450°F for 30 min, flipping halfway.
Seasoned: Add garlic, paprika, onion, or Cajun spice after frying.
Truffle: Drizzle with truffle oil, add Parmesan and parsley.
