Jamaican Curry Chicken
Jamaican curry chicken is a rich, aromatic dish where bone-in chicken is marinated with curry powder, garlic, thyme, and spices, then browned to build flavor before simmering in a savory sauce. Potatoes, onions, and Scotch bonnet pepper are often added, giving the dish its signature heat and depth. The result is tender, flavorful chicken in a bold, golden curry gravy, typically served with rice and peas or white rice for a comforting, satisfying meal.
Ingredients
3 lb chicken thighs chopped
3 tbsp curry powder
3 tbsp Jamaican Jerk Rub (or similar seasoning)
2 tbsp Salt & Pepper
1 onion chopped
3 whole cloves of garlic
1 tbsp ginger diced
1 carrot chopped
1 med potato cubed
2 scallion stalks
2 sprigs thyme
Directions
Season the Chicken
Season the chicken with 3 tbsp of curry powder beforehand and for at least an hour, or ideally overnight, allowing the flavors to penetrate deeply into the meat.
Prepare the Skillet
In a skillet, render down some chicken skin to make oil to cook with. Remove the skin pieces and add 1 tbsp of curry powder into the oil and toast until golden brown. Then add in whole cloves of garlic and ginger.
Add the Chicken
Add the chicken and stir to coat in curry flavored oil when the aromatics become fragrant. Cover for 15 minutes over medium heat and let simmer.
Add Vegetables
Add ginger, diced garlic and carrots, and potatoes with 2 cups of water. Cover and continue to simmer over medium heat until vegetables and chicken are tender and there is a rich sauce.
Serve
Serve over plain white or jasmine rice and enjoy!
