Special Equipment: Large stock pot
Ingredients
8 to 10 slices bacon
1 Tbsp butter or olive oil
1 large onion, diced
2 large carrots, peeled and diced
4 cups chicken broth
1 to 2 tsp salt
1 tsp black pepper
1 tsp garlic powder or 4 cloves minced garlic
¼ tsp dried thyme
½ to 1 tsp red chili flakes
16 oz gnocchi
2 cups heavy cream or half and half
2 cups shredded cheddar cheese
Directions
Cook bacon until crispy, then chop and set aside. Heat butter or olive oil in a large pot and sauté onion and carrots for 10 to 15 minutes until tender.
Add chicken broth and simmer until vegetables are soft. Reduce heat and stir in cream, salt, pepper, garlic, thyme, and chili flakes. Simmer gently without boiling.
Gradually stir in cheddar cheese until melted and smooth. Add gnocchi and cook until tender, about 2 to 4 minutes.
Stir in bacon, adjust seasonings, and serve warm.
