Lasagna Roll Ups

These Lasagna Roll Ups take everything you love about classic lasagna and turn it into an easy-to-serve, rolled-up version that’s just as comforting and cheesy. Each noodle is filled with a creamy ricotta mixture, hearty meat sauce, and melty mozzarella, then baked to bubbly perfection. Perfect for weeknights, meal prep, or when you want lasagna without the layering fuss.

Ingredients

  • 8 lasagna noodles, cooked and laid flat

  • 1 lb ground beef

  • 1 jar 24 oz pasta sauce

  • 1 cup ricotta cheese

  • 1 egg

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 3 tbsp Sugar optional, for a sweeter sauce

  • Salt and pepper, to taste

  • Fresh parsley (optional), for garnish

 

Directions

  1. Cook the Meat:

    Brown the ground beef or sausage in a skillet. Drain excess grease. Add half the marinara sauce, season with salt, pepper, garlic powder, and Italian seasoning. Let simmer 5 minutes.

  2. Mix the Filling:

    In a bowl, combine ricotta cheese, egg, Parmesan, half the mozzarella, and a pinch of salt and pepper.

  3. Assemble Roll Ups:

    Spread 2–3 tablespoons of the ricotta filling across each lasagna noodle. Spoon some meat sauce on top. Roll tightly from one end to the other.

  4. Layer in Dish:

    Spread a little marinara on the bottom of a 9x13 dish. Place roll ups seam-side down. Pour remaining sauce over top and sprinkle with remaining mozzarella.

  5. Bake:

    Cover with foil and bake at 375°F for 25 minutes. Uncover and bake an additional 10 minutes or until bubbly and cheese is melted.

  6. Garnish & Serve:

    Sprinkle with fresh parsley and serve hot.
