The Ultimate Peanut Butter & “Jelly” Sandwich

A modern, wholesome twist on the classic PB&J—made with homemade peanut butter and fresh berries instead of jelly.

Ingredients

  • 16 oz jar lightly salted peanuts

  • 1 package fresh berries raspberries, blackberries, or blueberries

  • 2 rice cakes or 2 slices of your favorite bread

 

Directions

  1. Make the Peanut Butter: Gently heat the peanuts in a dry skillet over medium heat to release their natural oils (about 3–5 minutes). Transfer them to a food processor and blend, scraping down the sides as needed, until the peanut butter reaches your desired creaminess.

  2. Prep the Berries: Wash your chosen fresh berries thoroughly and let them dry completely before using.

  3. Assemble the Sandwich: Lightly toast your bread or rice cakes. Spread a generous layer of homemade peanut butter on the bottom slice and a light smear on the top slice.

    Pile the fresh berries onto the bottom slice, then top with the other piece of bread or rice cake. Press down gently but firmly to release some of the berry juices and create that “jelly” effect.
