Lemon Garlic Parmesan Broccoli

Quick and flavorful broccoli tossed with garlic, lemon, and Parmesan. Using microwave broccoli keeps it fast, while a quick sauté and optional broil gives it fresh, bright flavor with lightly crisp edges.

Ingredients

  • 1 bag frozen microwave broccoli

  • 2 to 3 cloves garlic, minced

  • 1 to 2 tbsp olive oil or butter

  • Zest and juice of ½ to 1 lemon

  • ¼ cup grated Parmesan cheese

  • 1 to 2 tsp lemon thyme fresh or dried

  • Salt to taste

  • Black pepper to taste

 

Directions

  1. Cook broccoli according to package directions, then drain well to remove excess water.

  2. In a pan over medium heat add olive oil or butter and sauté garlic 30 to 60 seconds until fragrant.

  3. Add broccoli and cook 2 to 4 minutes to remove moisture and build flavor.

  4. Add lemon zest, lemon juice, lemon thyme, salt, and pepper and toss to coat.

  5. Turn off heat, add Parmesan, and toss until slightly melted. For crispy edges, place under the broiler 2 to 3 minutes.
