Prep Time: 20 minutes
Cook Time: 8 minutes
Special Equipment: Cast Iron
Ingredients
1 boneless New York strip steak
2 to 3 tbsp butter
2 to 3 cloves garlic, smashed or minced
Salt to taste
Black pepper to taste
Fresh rosemary or thyme optional
Directions
Pat steak very dry, season generously with salt and pepper, and let sit 15 to 20 minutes if possible.
Heat a skillet over medium high until hot, add a little oil, and sear steak 3 to 4 minutes without moving, then flip and cook another 3 to 4 minutes.
Lower heat slightly, add butter, garlic, and herbs if using, then tilt the pan and spoon the melted butter over the steak for 1 to 2 minutes.
Remove steak, rest 5 to 7 minutes, and spoon garlic butter over the top. Optionally deglaze the pan with a splash of liquid and pour over the steak.
