Loaded Avocado Toast with Bacon, Greens and Egg
Crispy sourdough layered with creamy avocado, bacon, fresh greens, and a runny egg. Bright, rich, and balanced with a light lemon vinaigrette.

Ingredients
1 to 2 tbsp butter
2 to 3 slices bacon
1 ripe avocado
1 egg
Small handful mixed greens
1 to 2 tbsp lemon vinaigrette
Salt and black pepper
Red pepper flakes optional
Everything bagel seasoning optional
Directions
Cook bacon in a skillet over medium heat until crispy, then remove and set aside.
In the same skillet add butter and toast sourdough until golden and crisp.
Mash or slice avocado and season lightly with salt and pepper.
Toss mixed greens lightly with lemon vinaigrette.
Cook egg to your preference.
Spread avocado on toast, add greens, then bacon, and place egg on top.
Finish with salt, pepper, optional toppings, and a light drizzle of vinaigrette.
