Mustard Crusted Cod

 

Ingredients

  • 4 small cod filets

  • 2 Tbsp mustard of choice

  • 1/3 cup seasoned breadcrumbs

  • cooking spray

 

Directions

  1. Preheat oven to 400 degrees F.

  2. Pat dry the cod, and brush each piece with the mustard on the top and sides.

  3. Place the breadcrumbs in a shallow baking dish. Roll each piece of fish into the breadcrumbs, making sure it's coated.

  4. Spray a sheetpan with cooking spray, and place each piece down. Spray the tops of the fish with more spray. Bake 10-15 minutes, or until the cod is at 145 degrees F internal temperature and flakey. Switch the oven to broil to toast the breadcrumbs, checking every 60 seconds to make sure it's not too done.

  5. Optionally, garnish with pickled mustard seeds and parsley
