Mustard Crusted Salmon

 

Ingredients

  • 2 Tbsp Asian mustard powder

  • 2 Tbsp cold water

  • 2 Tbsp lemon juice

  • 1 splash apple cider vinegar

  • 2 Tbsp brown sugar

  • 2 Tbsp mayo

  • 1/4 cup Italian breadcrumbs + 2 Tbsp

  • 1/4 cup cotija cheese

  • 3 sprigs thyme

  • Salt, pepper, smoked paprika

  • 2 salmon filets

 

Directions

  1. Combine the mustard powder and cold water until it's a paste. Allow to sit 10-15 minutes (this will create the mustard heat!) Then stir in the lemon juice. Add brown sugar, salt, 1/4 cup bread crumbs, cotija, mayo, thyme, paprika, and splash of apple cider vinegar.

  2. Pat salmon dry and season with salt and pepper. Top salmon with a generous portion of the mustard topping, and top each salmon with the additional 1 Tbsp bread crumbs each. Bake at 375 F for 20-25 minutes or until salmon flakes. Broil for 60 seconds for a crispy top.
