Rice Pudding with Peach Topping

Ingredients

  • For the Rice Pudding:

  • 1 cup glutinous rice

  • 4 cups milk

  • 1 cup water

  • 1/2 cup sugar

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • For the Peach Topping:

  • 1 can (15 ounces) peaches in light syrup, drained, diced, and mashed

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

  • Pinch of nutmeg

  • 1 tablespoon lemon juice

 

Directions

  1. Rinse the glutinous rice under cold water until the water runs clear.

  2. In a large saucepan, combine the glutinous rice, milk, water, sugar, and salt. Bring to a simmer over medium heat, stirring frequently.

  3. Reduce the heat to low and let the mixture simmer, stirring occasionally, for about 40-50 minutes, until the rice is tender and the mixture has thickened to a creamy consistency.

  4. Remove the saucepan from the heat and stir in the vanilla extract.

  5. While the rice pudding is cooking, prepare the peach topping. In a small saucepan, combine the mashed peaches, cinnamon, salt, nutmeg, and lemon juice.

  6. Cook over medium heat for about 10-15 minutes, until the mixture is warmed through and the flavors are well combined.

  7. Serve the rice pudding warm or chilled, topped with a generous spoonful of the peach topping.
