Panera Copycat Broccoli Cheddar Soup
A rich, creamy copycat of Panera’s iconic broccoli cheddar soup. Loaded with tender broccoli, shredded carrots, and plenty of sharp cheddar, this cozy classic is smooth, comforting, and perfect for bread bowls, dipping, or simple soup nights.

Ingredients
4 tbsp unsalted butter
1 small yellow onion, finely diced
2 cloves garlic, minced
¼ cup all-purpose flour
2 cups chicken broth
2 cups whole milk
1 cup heavy cream
3 cups fresh broccoli florets, finely chopped
1 cup shredded carrots
2½–3 cups sharp cheddar cheese, freshly shredded
½ tsp salt, to taste
½ tsp black pepper
¼ tsp paprika
Pinch of nutmeg
Directions
Melt butter in a large pot over medium heat. Add onion and sauté 3–4 minutes until soft. Add garlic and cook 30 seconds until fragrant.
Sprinkle in flour and stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in chicken broth, followed by milk and heavy cream. Stir until smooth and slightly thickened.
Add broccoli and carrots. Reduce heat to medium-low and simmer 10–12 minutes until vegetables are tender.
Use an immersion blender to partially blend the soup until mostly smooth but still slightly chunky, if desired.
Turn heat to low. Stir in shredded cheddar a handful at a time until fully melted and creamy.
Season with salt, pepper, paprika, and nutmeg if using. Taste and adjust.
Serve hot.
