Papa’s Turkey Soup

Papa’s Turkey Soup

Ingredients:

  • Turkey carcass

  • 28 oz canned tomatoes 

  • 5 potatoes diced

  • 3 or 4 carrots diced

  • Large onion diced

  • 3 celery stalks diced

  • 1/2 head cabbage chopped

  • 1 TBS Worcestershire sauce 

  • 1 TBS parsley, dried

  • 1 TS basil, dried

  • 1 TBS smoked paprika

  • 1/8 TS thyme, dried

  • Salt and pepper

  • 2 TBS roasted garlic or vegetable flavored nothing but bullion

  • 2 bay leaves

  • Chopped ham if you have leftovers

Preparation:

  1. Put turkey carcass in a stock pot large enough to cover turkey carcass with water 2 inches above turkey carcass. Bring to boil and reduce heat, simmer for 1 and 1/2 hrs. 

  2. Strain into large bowl with a fine mesh strainer, remove meat from turkey carcass and shred. 

  3. In a clean soup pot pour in turkey stock, leave enough room for remaining ingredients bring to boil. 

  4. Add the remaining ingredients bring to boil and allow to simmer for approximately 30 minutes. Add the chopped turkey meat and if you have leftover ham add it also. Cook until carrots and potatoes are tender. 

  5. You can season how you like it, make it spicy by adding chopped jalapeños or you can just add a whole jalapeño to add flavor but not the heat.
