Pickled Red Onions
Bright, tangy and irresistibly crisp , pickled red onions are a great flavor booster for every kitchen. Quick to prepare and packed with zesty flavors, they add vibrant color and a refreshing bite to tacos, burgers, sandwiches and salads.
Ingredients
1 large red onion, thinly sliced
1 cup water
1 cup vinegar (5% acidity; white or apple cider both work)
2 tablespoons salt
1 tablespoon black peppercorns, slightly crushed
1 bay leat
5 garlic cloves, sliced1 serrano pepper, cut into strips
1 teaspoon Mexican oregano, crushed between your palms
Directions
Make the brine.
In a saucepan, combine the water, vinegar, salt, peppercorns, bay leaf, serrano, and oregano. Bring to a boil and let it cook for about 5 minutes to develop the flavors.
Layer the jar.
In a clean, heat-safe jar, alternate layers of sliced onions and sliced garlic (onions, garlic, onions, garlic) until the jar is filled.
Pour.
Carefully pour the hot vinegar mixture over the onions and garlic until fully submerged. Press down gently if needed.
Cool.
Let cool at room temperature, then cover and refrigerate.
