Ingredients

  • 1 large red onion, thinly sliced

  • 1 cup water

  • 1 cup vinegar (5% acidity; white or apple cider both work)

  • 2 tablespoons salt

  • 1 tablespoon black peppercorns, slightly crushed

  • 1 bay leat
    5 garlic cloves, sliced

  • 1 serrano pepper, cut into strips

  • 1 teaspoon Mexican oregano, crushed between your palms

Directions

  1. Make the brine.

In a saucepan, combine the water, vinegar, salt, peppercorns, bay leaf, serrano, and oregano. Bring to a boil and let it cook for about 5 minutes to develop the flavors.

  2. Layer the jar.

In a clean, heat-safe jar, alternate layers of sliced onions and sliced garlic (onions, garlic, onions, garlic) until the jar is filled.

  3. Pour.

Carefully pour the hot vinegar mixture over the onions and garlic until fully submerged. Press down gently if needed.

  4. Cool.

Let cool at room temperature, then cover and refrigerate.
