Ingredients

  • 3 cups cooked, shredded or diced chicken

  • ¾ cup salsa

  • 1 teaspoon ground cumin

  • ½ teaspoon dried Mexican oregano (rub between palms to release flavor)

  • 1½ cups shredded cheese of your choice

  • 6 burrito-sized tortillas

  • Olive oil, for browning

  • 4 oz cream cheese, softened

  • ½ cup sour cream

  • 2–3 tablespoons canned jalapeños or diced green chilies

  • 2 tablespoons milk

  • ¼ teaspoon garlic powder

  • ⅛ teaspoon onion powder

  • ¼ teaspoon salt

  • ⅛ teaspoon black pepper

Directions

  1. Prepare the Sauce: In a bowl, mix together cream cheese, sour cream, jalapeños (or chilies), milk, and seasonings until smooth. Taste and adjust salt or spice level. Set aside.

  2. Prepare the Chicken Filling: In a mixing bowl, combine the cooked chicken, salsa, cumin, and oregano. Stir well to coat. Add about ¼ cup of the shredded cheese and mix again.

  3. Assemble Burritos: Spoon the chicken mixture into each tortilla, sprinkle with a bit more cheese, and roll tightly.

  4. Brown the Burritos: Heat a skillet over medium heat with a drizzle of olive oil. Brown each burrito on all sides until golden and crisp.

  5. Add the Fundido Sauce: Place browned burritos on an oven-safe dish. Spoon the prepared sauce generously over the top and sprinkle with the remaining cheese.

  6. Broil: Place under the broiler for 2–4 minutes, or until the top is bubbly and lightly browned.
