Pollo Fundido
Pollo Fundido is a cheesy, creamy, and mildly spicy chicken burrito dish that’s baked until golden and topped with a smooth jalapeño cream sauce. A Tex-Mex favorite that’s rich, comforting, and full of flavor

Ingredients
3 cups cooked, shredded or diced chicken
¾ cup salsa
1 teaspoon ground cumin
½ teaspoon dried Mexican oregano (rub between palms to release flavor)
1½ cups shredded cheese of your choice
6 burrito-sized tortillas
Olive oil, for browning
4 oz cream cheese, softened
½ cup sour cream
2–3 tablespoons canned jalapeños or diced green chilies
2 tablespoons milk
¼ teaspoon garlic powder
⅛ teaspoon onion powder
¼ teaspoon salt
⅛ teaspoon black pepper
Directions
Prepare the Sauce: In a bowl, mix together cream cheese, sour cream, jalapeños (or chilies), milk, and seasonings until smooth. Taste and adjust salt or spice level. Set aside.
Prepare the Chicken Filling: In a mixing bowl, combine the cooked chicken, salsa, cumin, and oregano. Stir well to coat. Add about ¼ cup of the shredded cheese and mix again.
Assemble Burritos: Spoon the chicken mixture into each tortilla, sprinkle with a bit more cheese, and roll tightly.
Brown the Burritos: Heat a skillet over medium heat with a drizzle of olive oil. Brown each burrito on all sides until golden and crisp.
Add the Fundido Sauce: Place browned burritos on an oven-safe dish. Spoon the prepared sauce generously over the top and sprinkle with the remaining cheese.
Broil: Place under the broiler for 2–4 minutes, or until the top is bubbly and lightly browned.
