Yield: 3/4 cup
Prep Time: 5 Minutes

Ingredients

  • 1 tablespoon chili paste (such as sambal oelek)

  • 2 tablespoons rice vinegar

  • 1 tablespoon garlic paste

  • 2 tablespoons ginger paste

  • ¼ cup sugar (or 2 tablespoons for less sweetness)

  • 1 tablespoon chili oil (with or without crunch)

  • ½ cup soy sauce (regular or low sodium)

Optional Add-Ins:

  • ½ teaspoon sesame oil, toasted sesame seeds, thin-sliced green onions, or a squeeze of lime or yuzu juice.

Directions

  1. Whisk all ingredients together in a small bowl or jar until the sugar dissolves. Taste and adjust as desired—add more vinegar for brightness, more chili oil for richness, or reduce sugar for balance. Let rest for 10–15 minutes to allow the flavors to meld. Drizzle over potstickers or serve on the side for dipping.
