Roasted Goat Cheese Stuffed Dates

Roasted Goat Cheese Stuffed Dates 

  • 16 medjool dates about 2 cups

  • 4 oz goat cheese 113 g

  • ¼ cup pine nuts

    To serve: flaky sea salt, ground black pepper, extra virgin olive oil

INSTRUCTIONS 

  1. Prep: Preheat oven to 375 degrees F (190 C).

  2. Slice dates lengthwise on one side and remove the pit.

  3. Stuff: Spoon a bit of goat cheese into each date.

  4. Set cut side up on a parchment-lined baking sheet and bake for 10 minutes, or until warmed through.

  5. Pine Nuts: Meanwhile, add pine nuts to a small saute pan and set over medium heat.

  6. Cook until golden brown and toasted, about 5 minutes (keep a careful eye as these can burn easily).

    Serve: Drizzle warm dates with olive oil and sprinkle with toasted pine nuts, salt,
