Shepherd’s Pie
A comforting and hearty dish made with seasoned ground meat, mixed vegetables, and creamy mashed potatoes baked to golden perfection.
Ingredients
For the Filling:
1 tablespoon olive oil
1 onion, chopped
1½ pounds ground beef or lamb
2 cups mixed vegetables (peas, carrots, corn)
3 tablespoons tomato paste
½ teaspoon salt
¼ teaspoon pepper
1¾ cups beef broth
2 tablespoons flour
For the Mashed Potatoes:
20 ounces potatoes, peeled and cubed
¼ cup butter
½ cup milk
Salt and pepper, to taste
Directions
Preheat Oven: Set oven to 375°F (190°C). Grease a 2-quart baking dish.
Heat olive oil in a skillet over medium heat. Sauté onions until soft. Add ground meat and cook until browned. Drain excess fat.
Stir in mixed vegetables, tomato paste, salt, and pepper. Cook for 5 minutes. In a small bowl, whisk together beef broth and flour, then add to the skillet. Simmer until thickened.
Boil potatoes until tender. Drain and mash with butter, milk, salt, and pepper until smooth.
Spread the meat mixture into the prepared baking dish. Top with mashed potatoes, spreading evenly.
Bake for 20 minutes or until the top is golden brown.
Let cool slightly before serving.
