Simple Mashed Sweet Potatoes

Ingredients:

  • 4 large sweet potatoes

  • 4 tablespoons unsalted butter

  • Salt to taste

Instructions:

  1. Wash the sweet potatoes thoroughly. Peel them and cut into evenly sized chunks. Place the sweet potato chunks into a large pot, add enough water to cover the potatoes. Bring the water to a boil over high heat, then reduce heat to medium and let it simmer.

  2. Cook the potatoes until they are tender, this should take around 15-20 minutes. Once the potatoes are cooked and tender, drain the water using a colander. Return the drained sweet potatoes to the pot or place them in a large mixing bowl.

  3. Add the butter to the hot potatoes and begin mashing using a potato masher or a hand mixer. Mash until they reach your preferred consistency. Add salt to taste.

  4. Mix well to ensure the salt and butter are evenly distributed. Serve immediately while hot. If you like, you can add an extra pat of butter on top just before serving.
