Spiced Beef with Curry Rice
Tender, flavorful spiced beef simmered with aromatic seasonings and served over warm curry rice for a comforting, satisfying meal packed with bold savory flavor and rich curry spice in every bite.

Ingredients
Spiced Meat
10 oz ground wild game or ground beef
6 oz carrots, sliced into half moons
¼ onion, diced
2 Tbsp tomato paste
¼ tsp chili powder
½ tsp kosher salt (or to taste)
¼ tsp black pepper
1 Tbsp neutral oil (avocado, canola or olive)
Curried Rice
½ cup jasmine rice
1 tsp curry powder
Pinch of salt
1 cup water
Cilantro Lime Crema
¼ cup sour cream
1 packed cup fresh cilantro (stems are fine)
¼ onion
1 Tbsp minced garlic
4 slices pickled jalapeno, minced
Juice of 1 large lime
1 tsp rice vinegar
Salt, to taste
Directions
Cook the Rice
Rinse the jasmine rice under cold water until the water runs mostly clear.
In a small saucepan, combine rice, water, curry powder, and a pinch of salt.
Bring to a boil, cover, reduce heat to low, and simmer for 12-15 minutes until tender.
Fluff with a fork and keep warm.
Make the Cilantro Lime Crema
While the rice cooks, add cilantro, onion, garlic,
jalapeño, and lime juice to a blender or food processor.
Blend until smooth, adding a splash of water if needed.
Transfer to a bowl and stir in sour cream and rice vinegar.
Season with salt to taste and refrigerate until ready to serve.
Cook the Meat & Vegetables
Heat oil in a large skillet over medium heat. Add carrots and sauté for 3-4 minutes until they begin to soften.
Add ground meat and cook, breaking it up, until mostly browned. Stir in diced onion, tomato paste, chili powder, salt, and pepper. Cook for another 4-6 minutes, until the meat is fully cooked and the mixture is slightly caramelized.
Assemble
Divide the curried rice between bowls. Top with the spiced meat mixture and finish with a generous drizzle of cilantro lime crema.
