Spicy Pickled Onion Cups
Sweet Vidalia onion layers turned into crunchy cups and stacked with spicy chicken, sharp pickles, juicy tomatoes, and creamy peppered mayo for a bold girl dinner moment that hits spicy, tangy, sweet, and crunchy all at once

Ingredients
1 large Vidalia onion peeled and separated into cup layers
1 spicy chicken breast cooked and cubed
½ cup shredded white cheese goat, mozzarella or Monterey Jack
½ cup sweet cherry tomatoes halved
¼ cup raw onion slices from the inner onion
¼ cup pickled beets
¼ cup pickled red onions
2 tbsp mayonnaise mixed with cracked black pepper
Freshly cracked black pepper
Directions
Separate the Vidalia onion into natural cup shaped layers and arrange them on a plate.
Add a small pinch of shredded cheese to the bottom of each onion cup, then top with cubed spicy chicken.
Layer on cherry tomatoes and raw onion slices, followed by pickled beets and pickled red onions.
Finish with a dollop of peppered mayo and a generous sprinkle of freshly cracked black pepper over the top.
