Steak Roulade

 

Ingredients

  • 1.5 lb sliced sirloin or flank steak

  • 2 tsp Italian seasoning

  • 1 jar of your favorite pesto

  • salt & pepper to taste

  • minced garlic to taste

  • 2 cups spinach, torn

  • 1 tbsp butter or vegetable oil

  • 1 1/2 cup Parmesan cheese

  • Your favorite vegetables cut into thin strips

 

Directions

  1. Preheat the oven to 375° Cover the steak and plastic wrap or wax paper to pound it thin

  2. Add salt, pepper, and Italian seasoning to the front and back of the steak

  3. Mixed together, garlic, your favorite pesto and Italian seasoning and spread a thin layer on the steak leaving at least at 1/2 inch border Next layer, your veggies and shredded cheese

  4. Next roll up your steak and pen with toothpicks or tie with twine this keeps them from falling apart Add butter to a cast iron skillet over medium high heat.

  5. Once it’s ripping hot, you can start browning each roll for 2 to 3 minutes.

  6. Finish them off in a 375° oven for 5 to 10 minutes Your steaks are finished once the internal temperature is at least 125° for rare steak or 160° for a well done steak
