Street Corn Pork Stir Fry

Ingredients
1 pork tenderloin, sliced into ¼ inch pieces
3 tbsp mayonnaise, divided
1½ tsp kosher salt, divided
1 tsp paprika, plus more for garnish
6 ears corn, kernels removed
2 tbsp cooking oil
2 medium jalapeños, thinly sliced
Juice of 3 limes
2 tbsp grated Cotija cheese, plus more for serving
Fresh cilantro

Directions
Toss the pork with 2 tablespoons mayonnaise, 1 teaspoon salt, and the paprika.
Heat the oil in a large skillet over high heat. Cook the corn and jalapeños for 4 to 5 minutes until lightly charred. Remove from the skillet.
Cook the pork in batches for about 2 minutes per side until browned and cooked through.
Return the corn mixture to the skillet. Add the lime juice, Cotija cheese, remaining mayonnaise, and remaining salt. Toss until everything is coated and heated through.
Transfer to a serving platter. Drizzle with additional mayonnaise, sprinkle with extra Cotija, paprika, and cilantro, and serve with lime wedges.
