Teriyaki Chicken and Broccoli Rice Bowl

Tender chicken coated in a glossy homemade teriyaki sauce served over rice with steamed vegetables. A quick, balanced bowl with sweet, savory flavor and a simple homemade sauce.

Ingredients

  • 1 lb chicken breast, cubed

  • 2 tbsp olive oil

  • 1/2 cup low sodium soy sauce

  • 1/4 cup water

  • 1/4 cup light brown sugar

  • 2 tbsp rice vinegar

  • 1 tsp sesame oil

  • 1 tsp ground ginger

  • 2 cloves garlic, minced

  • 1 tbsp honey

  • 1 tbsp cornstarch

  • 2 cups cooked rice

  • 3 cups steamed vegetables such as broccoli, carrots, or bell peppers

  • 2 tbsp sesame seeds

  • Green onions optional

 

Directions

  1. Heat olive oil in a large skillet over medium high heat and cook chicken 5 to 7 minutes until browned and cooked through.

  2. In a bowl whisk soy sauce, water, brown sugar, rice vinegar, sesame oil, ginger, garlic, honey, and cornstarch until smooth.

  3. Pour sauce over cooked chicken and cook 2 to 3 minutes, stirring, until thickened and glossy.

  4. Serve over rice with steamed vegetables and finish with sesame seeds and green onions.
