Teriyaki Chicken and Broccoli Rice Bowl

Ingredients
1 lb chicken breast, cubed
2 tbsp olive oil
1/2 cup low sodium soy sauce
1/4 cup water
1/4 cup light brown sugar
2 tbsp rice vinegar
1 tsp sesame oil
1 tsp ground ginger
2 cloves garlic, minced
1 tbsp honey
1 tbsp cornstarch
2 cups cooked rice
3 cups steamed vegetables such as broccoli, carrots, or bell peppers
2 tbsp sesame seeds
Green onions optional
Directions
Heat olive oil in a large skillet over medium high heat and cook chicken 5 to 7 minutes until browned and cooked through.
In a bowl whisk soy sauce, water, brown sugar, rice vinegar, sesame oil, ginger, garlic, honey, and cornstarch until smooth.
Pour sauce over cooked chicken and cook 2 to 3 minutes, stirring, until thickened and glossy.
Serve over rice with steamed vegetables and finish with sesame seeds and green onions.
