Turkey Chili

A hearty, stovetop turkey chili packed with beans, veggies, and bold seasoning. Easy to make, great for meal prep, and full of comforting flavor.

Ingredients

  • 1 small white onion, peeled and finely chopped

  • 1 green bell pepper, seeded and finely chopped

  • 1 tbsp minced garlic

  • 1 lb ground turkey

  • 1 can 28 oz crushed tomatoes

  • 1 can 15 oz red kidney beans, drained and rinsed

  • 1 can 15 oz white kidney beans, drained and rinsed

  • 1 can 15 oz corn, drained and rinsed

  • 3 tbsp chili powder

  • 1 tsp oregano

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp cumin

  • 1/4 tsp salt

  • 32 oz broth of choice

 

Directions

  1. Heat a large pot or Dutch oven over medium heat, add a drizzle of oil, and cook ground turkey until browned, breaking it apart as it cooks.

  2. Add onion, bell pepper, and garlic and cook 4 to 5 minutes until softened.

  3. Stir in spices, crushed tomatoes, beans, and corn and mix well.

  4. Add broth, bring to a simmer, then reduce heat and cook 20 to 25 minutes, stirring occasionally.

  5. Taste and adjust seasoning as needed.
