Apple Cider Sweet Heat Sausage Skillet

Ingredients

  • 2 lbs smoked sausage sliced

  • 1 large sweet onion sliced

  • 1 red bell pepper sliced

  • 1 green bell pepper sliced

  • 1 jalapeño sliced

  • 2 apples peeled and cubed

  • 2 tablespoons bacon grease

  • Salt and black pepper

  • ½ to 1 teaspoon roasted garlic powder

  • ½ to 1 teaspoon onion powder

  • Splash of apple cider

  • 1½ cups reduced apple cider

  • ½ to 1 cup regular apple cider

  • 2 to 3 tablespoons brown sugar

  • 1 tablespoon grainy mustard or Dijon

  • 1 to 2 tablespoons apple cider vinegar

  • ½ to 1 teaspoon chipotle powder

  • 1 cup red pepper jelly

  • 1 to 2 tablespoons sausage drippings

  • Pinch of salt

 

Directions

  1. Heat a comal to medium high and sear the sausage until browned then scoop out 1 to 2 tablespoons drippings and push sausage to the outer edge.

  2. Add bacon grease to the center and cook onions bell peppers and jalapeño until softened and lightly charred then season with salt pepper garlic powder and onion powder.

  3. Stir in the cubed apples and cook until tender then add a splash of cider to help caramelize.

  4. In a bowl whisk reduced cider regular cider brown sugar mustard apple cider vinegar chipotle powder and salt then simmer until glossy and stir in drippings and red pepper jelly.

  5. Bring sausage back to the center toss everything together and pour in ½ to ¾ cup glaze letting it bubble and thicken then add more glaze for shine and finish with extra sliced jalapeño.
