Ingredients

  • 1 lb boneless, skinless chicken breast

  • ¼ cup buffalo hot sauce (like Frank’s RedHot)

  • 1 tbsp olive oil (plus more for brushing bread)

  • Salt and black pepper, to taste

  • 4 oz cream cheese, softened

  • ¼ cup mayonnaise

  • 1 tbsp dry ranch seasoning mix

  • ½ cup crumbled feta cheese (or bleu cheese)

  • 2 tbsp chopped fresh chives or green onions, for garnish

  • 1 baguette, sliced into ½-inch thick pieces

  • 1 tsp dijon mustard, optional

 

Directions

  1. Prepare the Chicken:
    Butterfly each chicken breast by slicing horizontally almost all the way through, leaving a hinge. Open like a book, pat dry, and season both sides with salt and black pepper.

  2. Marinate the Chicken:
    In a bowl, toss the butterflied chicken with olive oil and buffalo hot sauce until coated. Let marinate for at least 15 minutes.

  3. Grill the Chicken:
    Preheat your grill to medium-high. Grill the chicken for 3–5 minutes per side, until cooked through and juicy. Rest for a few minutes.

  4. Shred the Chicken:
    Shred the grilled chicken with two forks. Toss with any leftover buffalo sauce from the marinade bowl.

  5. Prepare the Crostini:
    Brush both sides of each baguette slice with olive oil. Grill 1–2 minutes per side, until golden. (Or toast in a 375°F oven for 5–7 minutes.)

  6. Make the Spread:
    In a bowl, mix cream cheese, mayonnaise, and ranch seasoning until smooth. For a mustardy upgrade, add 1 tsp dijon mustard here.

  7. Assemble the Crostini:
    Spread a generous layer of the creamy mixture on each toasted baguette slice. Top with shredded buffalo chicken and a sprinkle of feta cheese.
