Busy Moms Beef Stew
A comforting and flavorful one-pot meal that’s perfect for chilly days. This stew comes together easily with simple ingredients and can be adapted with lamb for a classic Irish twist.
Ingredients
1 lb beef stew meat, cut into bite-sized cubes
2 Tbsp cornstarch
2–3 Tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 (29 oz) can Veg-All Original mixed vegetables
1 (15 oz) can diced potatoes (optional, for added heartiness)
2–3 Tbsp Worcestershire sauce
32 oz beef broth, add more or less depending on desired consistency
Salt and black pepper, to taste
Directions
Prepare the Beef: If not pre-cubed, cut the beef into bite-sized pieces. Place the beef in a bowl, sprinkle with cornstarch, and toss to coat evenly. Let sit for 10–15 minutes to allow the cornstarch to adhere.
Sauté Aromatics: In a large pot or deep skillet, heat olive oil over medium heat. Add the chopped onion and garlic. Sauté for 2–3 minutes, or until fragrant and slightly softened.
Brown the Beef: Add the cornstarch-coated beef to the pot. Cook, stirring occasionally, until the meat is browned on all sides and cooked through.
Add Vegetables & Broth: Stir in the Veg-All mixed vegetables and diced potatoes (if using). Pour in about half of the beef broth and the Worcestershire sauce. Bring to a gentle boil.
Simmer & Adjust: Continue simmering the stew, adding more broth as needed to reach your desired consistency. If the stew becomes too thin, you can thicken it by stirring in an additional tablespoon of cornstarch mixed with a bit of cold water.
Season & Serve: Season to taste with salt and pepper. Once everything is heated through and flavors have melded, remove from heat and serve hot. Serving Suggestions Serve with warm Irish soda bread for a complete and satisfying meal. For a traditional Irish version, substitute lamb for the beef.
