Buttermilk Pancakes

Ingredients
2 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 large egg
2 cups buttermilk
2 tablespoons melted butter
1½ teaspoons vanilla extract
Directions
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract.
Pour the wet mixture into the dry and stir just until combined. Don’t overmix—lumps are fine!
Let the batter sit for 15 minutes to allow it to thicken slightly.
Heat a skillet or griddle over medium heat and grease lightly with butter or oil. Pour ¼ cup of batter for each pancake.
Cook until bubbles form and edges are set (1–2 minutes). Flip and cook another minute until golden brown.
