Chicken Cobbler

This comforting casserole is made with bite-size chicken, a bag of frozen vegetables, creamy sauce, and topped with a cheesy biscuit crust. It’s hearty, simple, and perfect for an easy dinner.

Ingredients

  • 1 large chicken breast, cut into bite-size pieces

  • 1 bag frozen mixed vegetables

  • 1 can (10.5 oz) cream of chicken soup

  • 2 cups chicken broth

  • 1 box Red Lobster Cheddar Bay Biscuit Mix (including seasoning packet)

  • 2 cups milk

  • 1 stick (1/2 cup) butter, melted

  • 2 cups shredded cheddar cheese

 

Directions

  1. Preheat Oven: Preheat oven to 350°F. Grease a 9x13 baking dish.

  2. Cook Chicken: In a skillet over medium heat, cook chicken pieces until no longer pink. Lightly season with salt and pepper.

  3. Layer Chicken and Vegetables: Spread the cooked chicken evenly across the bottom of the baking dish. Top with the entire bag of frozen mixed vegetables.

  4. Creamy Layer: In a medium bowl, whisk together cream of chicken soup and chicken broth until smooth. Pour evenly over the chicken and vegetables. Do not stir.

  5. Biscuit Topping: In another bowl, whisk together the biscuit mix, seasoning packet, and milk until combined. Pour gently over the creamy layer. Do not mix.

  6. Butter and Cheese: Drizzle melted butter evenly over the top. Sprinkle with shredded cheddar cheese.

  7. Bake: Bake uncovered for 45 minutes, until the biscuit topping is golden brown and cooked through.

Let rest 10 minutes before serving so it sets.
