Harvest Crunch Salad with Balsamic Glaze

A fresh, colorful salad loaded with tender chicken, crisp vegetables, sweet berries, crunchy pecans, bacon, and crispy shallots, all finished with a simple vinaigrette and a drizzle of balsamic glaze.

Ingredients

  • 2 cups micro greens

  • 1 to 2 cups cooked chicken, sliced or chopped

  • 1/2 cup crispy bacon bits

  • 1 cup strawberries, sliced

  • 1 cup blueberries

  • 1 cucumber, sliced or chopped

  • 1 apple, thinly sliced

  • 1 cup tomatoes, halved or chopped

  • 1/2 cup pecans, toasted and chopped

  • Fresh basil, torn or sliced

  • Crispy shallots, to taste

  • 2 to 3 tbsp olive oil

  • 1 to 2 tbsp red wine vinegar

  • Salt and pepper, to taste

  • Balsamic glaze

 

Directions

  1. Arrange the micro greens on a large serving platter or in a salad bowl. Top with the chicken, tomatoes, cucumbers, strawberries, blueberries, and apples.

  2. Sprinkle the pecans, bacon bits, basil, and crispy shallots over the top.

  3. Drizzle with the olive oil and red wine vinegar. Season with salt and pepper to taste.

  4. Finish with a drizzle of balsamic glaze just before serving.
