Ingredients

  • 8-12 hard-boiled eggs

  • 1/3 cup Duke’s mayonnaise

  • 3 tbsp chopped cilantro

  • 2 tbsp lime juice

  • 1-2 chopped red onion

  • Salt & pepper, to taste

  • Smoked paprika for garnish

 

Directions

  1. Prepare the Eggs: Hard-boil the eggs and peel them. For easier peeling, some recipes suggest a brief ice bath immediately after boiling.

  2. Mix the Eggs: Peel the eggs in quarters, then in a bowl combine the vegetables with Duke’s mayonnaise, chopped cilantro, onion and lime juice.

  3. Season and Mix: Add salt and pepper to taste, mixing until the filling is smooth and savory.

  4. Assemble: Mix the egg halves with the vegetable mixture.

  5. Garnish: Finish each egg with a sprinkle of smoked paprika for a smoky, spicy kick. Serve with chips.
