Several folks asked me to share the recipe I use for the scallion shortcake drop biscuits I used in the Tomato, Bacon and Cheese Shortcake recipe on my 3/23/23 Tiktok live.

This is one of those old-school recipes, many families have a version of. Tomato Pie just happens to be one that I've come across and like to use because it's super adaptable.

This recipe came from my mom’s cookbook and can be found under several other names including “Pennsylvania Dutch Chocolate Funny Cake” and Mennonite Funny Cake Pie. But in my Mom’s cookbook it was just Funny Cake.

This was a simple lunch my Dad used to make me on Saturdays when I would go into work with him.

I was working with a new version of this classic pickled salad I am calling “Sherry’s Special Giardiniera Salad” in honor of Sherry Skinner‘s birthday and decided to rework it with some different vegetables, including a southern, classic okra.
